Left the edge just a little thicker than I usually would to toughen it up a little, and with the extra edge retention from it being 52100, this should hold up really well as a little workhorse in the kitchen.
Overall length 260mm
Blade: 140mm, 2.7mm stock, .45edge, high grit hand satin, 52100 carbon steel
Handle: 115mm, Polished southern Rata with red g10 pins and liners.
52100 is a high grade carbon steel that has added chromium among other components to greatly improve edge retention over that of regular carbon steel. While this does reduce the chance of rust, this should still be kept dry and oiled if its not being used for longer than a week.
Southern Rata is a native parasitic tree from New Zealand that is a tight grained dense hardwood. Closely related to our native xmas tree the Pohutukawa.
