Soft damascus cladding over a professional grade carbon steel. Like 52100, v-toku2 has added chromium and vanadium to give it superior edge retention and hardness. Because this steel is hard enough to be delicate, soft cladding is used to provide strength.
This knife should still be treated as a very hard knife and should not be chopped with.
305mm overall
180mm edge, 3mm stock, full flat grind to a .3mm edge. Etched over high grit hand satin
120mm handle, Black Maire native timber with white g10 pins and liners.
This is also the first of my new kitchen knife handle style I've been working on 🙂. The handle is tapered on either end as well as ovalised so it's an extremely simple comfortable grip that sits quite well in the hand.
Black Maire is a native tree from southern New Zealand that is a distant relative of the Olive tree. It is extremely dense and has a very high sap content in the dry timber making it perfect for a knife handle.
